You Need This Easy Teriyaki Chicken Meal Prep Recipe

This easy teriyaki chicken recipe is only 5 ingredients! It’s simple to meal prep for lunch, but just as easy to throw together in a pinch for dinner. This recipe is, without a doubt, one of our favorite meal prep options to throw into the mix. Although my mongolian beef bowls are tough to compete with!

If you decide to prep this meal, try out one of my favorite meal prep/cooking tips: use a variety of appliances to cook everything at once. For example: rice on the stove, chicken in the pressure cooker, and broccoli in the oven or microwave (if using frozen).

Ingredients needed for easy teriyaki chicken

Onion

Sometimes protein will char/burn at the bottom of my pressure cooker when I mix it with additional sauces or seasonings. I like to put a layer of roughly chopped onion on the bottom of my pressure cooker pot to prevent this.

Chicken broth

Next, I always include some broth (or water) to help the pressure cooker function and cook properly. I prefer to have ~1.5-2 cups of liquid when cooking 2lb of chicken in my pressure cooker.

Chicken

I usually like to shred my pressure cooker protein, but I prefer to cube the chicken into little bites for this recipe. However, you could keep them whole and make a teriyaki shredded chicken – yum! If you’re looking for an alternative to chicken breast, chicken thighs or pork tenderloin would be just as good. Just make sure you adjust cooking times accordingly!

Teriyaki Sauce

Okay, this is definitely the most important part! You could make your own teriyaki sauce or use a bottled option. I choose to use a bottled sauce, specifically Kinder’s Teriyaki Sauce and Marinade. It’s certainly my favorite in terms of taste and texture. I actually haven’t tried another brand or my own teriyaki mixture because this one is SO good!

Other Ingredients

Finally, you could add some of your own flavors. For example, I add some ground ginger to this recipe. If you want some heat, try some cayenne pepper or red pepper flakes. After plating my meal, I like to top it with sesame seeds and some green onion to make it look nice and fancy. Food always tastes better when it looks good, right?

Pressure Cooker Teriyaki Chicken

Ingredients

  • 1/2 medium onion
  • 1/2 cup chicken broth consider low sodium
  • 2 lb chicken breast ~3 chicken breasts
  • 1 tsp ground ginger optional
  • 1.5 cup Kinder's Teriyaki Sauce and Marinade

Instructions

  • Roughly chop onion and place at the bottom of pressure cooker
  • Add chicken broth
  • Cube chicken breast into bite-sized pieces
  • Toss chicken with ground ginger (if using)
  • Add chicken to pressure cooker pot.
    *I like to try to spread the chicken into an even layer to avoid all of the pieces sticking together when cooking
  • Pour teriyaki sauce on top
  • Seal & pressure cook on high for 8-10 minutes with quick release
  • Consider serving with a grain & veggie + top with sesame seeds and sliced green onions.
