Ingredients in Mango Avocado Salsa

This delicious mango avocado salsa is less than 10 ingredients and packs in a variety of nutrients, textures, and sweet and savory flavors!

I typically use two red mangos when making a single batch. However, the yellow skinned mangos would work as well. Just a heads up – you might need 1-2 more yellow mangos. I find that the yellow varieties usually have a smaller yield compared to the red/green skinned mangos.

In the past, I skipped the avocado…and to be honest I’m so upset that I ever shared this recipe without it!!! The addition of avocado adds a buttery texture and flavor. I also find that after mixing, the avocado helps the salsa hold its shape better while eating. Without it…it just kind of falls all over the place.

You know I’m going to take any chance to add some extra veggies to a recipe, so we’re throwing in a bell pepper. Aside from adding color and nutrients…the bell pepper adds a nice crunch to the softness of the mango and avocado! While I prefer the bright pop of red, you could use any colored bell pepper. If you want to add some heat, swap the bell pepper for a couple of jalapeños without seeds!

Add a little bit of red onion and cilantro for more bursts of flavor. Finally, add some salt and lime juice to bring out the flavors and keep the avocado flesh bright!

Storage

Although avocados can turn brown in what seems like a matter of seconds, the lime juice in this recipe helps maintain quality. I’ve had success storing this mix in an airtight container for up to 2 days. I love using mixing bowls with airtight lids for this recipe so I can mix it and throw it straight into the fridge! When I use this recipe for meal prep, I usually make 2 batches split up during the week.

Balanced Meal ideas with Mango Avocado Salsa

My favorite way to enjoy this fresh mango avocado salsa is on tacos. I heat a couple of corn tortillas in a pan, top with my slow cooker pork carnitas, and add a 1/4 cup of this mango salsa on top of each! This mango salsa is also delicious on top of shrimp or fish tacos!

You could also use this mango avocado salsa to top grilled protein – chicken, shrimp, or salmon work well. Serve with a side of rice and grilled veggies to balance out the meal!

Ingredients

  • 2 medium red mangos ~2 cups diced
  • 1 medium red bell pepper
  • 1 medium avocado
  • 1/4 small red onion
  • 1 handful cilantro
  • 1 lime
  • 0.25 tsp salt

Instructions

  • Dice mangos, bell pepper, avocado, red onion, cilantro and add to a medium sized bowl
  • Add the juice of 1 lime and sprinkle with salt
  • Gently mix to combine and serve immediately or store in an airtight container for up to 2 days
