Homemade Peanut Butter Protein Rice Krispies Treats

If you’re looking for a sweet treat with a little bit of extra protein…this. is. IT! This recipe for peanut butter protein rice krispies treats is a tasty treat with a bump up in protein to 7g per piece!

No matter how you say it – rice krispies treats, rice krispy treats, or rice crispy treats – you’re going to love this dessert idea if you have some protein powder on hand that you’d like to use!

Peanut Butter Protein Rice Krispies Treats

We’re adding some peanut butter and whey protein powder to the childhood classic rice krispies recipe of butter, marshmallows, and rice cereal to add some more flavor (because who doesn’t like peanut butter?) and bump up the protein per serving from 1g to 7g! 

While this is a great recipe to make a higher protein treat at home with simple ingredients, I do not suggest relying on protein rice krispie treats to significantly increase your protein intake. You will do far better getting enough protein from a complete meal. 🙂 This is simply a creative way to use up some protein powder on hand in a treat!

Equipment needed

  • Non-stick pan or large pot
  • Measuring cups
  • Silicone spatula
  • Large cookie scoop
  • Medium bowl or large bowl
  • Parchment paper
  • Baking sheet or square baking dish
  • Airtight storage container

Ingredients needed

You will need the following ingredients to make these high protein rice krispie treats – butter, peanut butter, marshmallows, rice cereal, and vanilla protein powder.

I use a natural peanut butter in this recipe since it’s easy to mix with a runny consistency – but any peanut butter or peanut butter alternative, like almond butter or sunflower seed butter, should be fine. A fresh bag of marshmallows will melt best – regular or mini marshmallows would both work.

Add a scoop of your favorite protein powder to bump up the protein content a bit per piece. I personally choose to use Ascent whey since there are minimal ingredients, and it is a third-party tested powder for safety and purity standards. I have always used vanilla flavored protein…but I imagine chocolate protein powder would be fantastic too! 

I like to add a little drizzle of chocolate on top of my bites, so I am also including chocolate chips and coconut oil in this recipe! 

Ascent Whey Protein Powder

1 tbsp

butter

1/2 cup

peanut butter

3 cups

marshmallows

2 cups

rice krispies cereal

1 scoop

vanilla whey protein powder

2 tbsp

chocolate chips, for optional chocolate drizzle

1/4 tsp

coconut oil, for optional chocolate drizzle

How to make peanut butter protein rice krispies treats

Step 1: Melt butter, peanut butter, and marshmallows in a large nonstick pan over medium – low heat

Step 2: Stir the marshmallow mixture frequently until almost fully melted and combined – it will continue to melt when removed from heat

Step 3: Remove from heat and immediately add in protein powder and cereal

Step 4: Stir with a silicone spatula until combined well

Step 5: Transfer to a mixing bowl. Using a large cookie scoop, create even portions or bites and place on a parchment paper lined baking sheet

You could also make bars by transferring the cereal mixture directly to a square pan lined with parchment paper or sprayed with nonstick spray – although they will be pretty thin!

Step 6 (optional): Heat chocolate chips and coconut oil in a microwave-safe bowl until fully melted. I only do ~10-15 seconds at a time so it doesn’t burn

Step 7: Drizzle chocolate topping evenly over rice krispies treats

Step 8: Allow to cool completely and transfer to an airtight container. Store at room temperature.
If in a square baking pan, use a sharp knife to slice into even portions before transferring to an airtight container. Consider wrapping the individual cereal bars in plastic wrap and storing in the fridge or freezer to enjoy at a later date!
