Add your (pitted!) dates, coconut, and almond extract to food processor and blend until smooth - I do 1-2 minutes
Roll the mixture up into whatever bite size desired and place them on a baking sheet lined with parchment paperI usually get ~20 small bites from this recipe
Top each bite with an almond - optionalI press the almond down into the bite and then do a little touch up shaping
Melt the chocolate and coconut oil, if using, in the microwave just until it becomes smoothI usually do 2 rounds of 15 seconds, mixing in between
Drizzle or dip your bites into the chocolate and then place them back on your baking sheet and into the fridge or freezer until the chocolate setsI usually pop mine in the freezer for ~10 minutes
Store in an airtight container in the fridge and enjoy!I haven't personally tried freezing these (they're gone quick!), but I bet they would freeze well if you wanted to make a larger batch all at once.
