Instructions
Add pitted dates, cashews (or cashew butter), cocoa powder, and peppermint extract to a food processor and blend on high until mostly smooth and combined (~1-2 minutes)
Add date mixture to a medium sized mixing bowl with chocolate rice cereal and combine.I say mix with your hands for best results!
Form into even, bite sized pieces and place onto a parchment lined baking sheet.I usually get 16 pieces from this recipe
Heat chocolate chips and coconut oil in a small glass bowl that is microwave safe. I suggest only heating 15 seconds at a time, mixing in between to prevent burning
Drizzle chocolate onto bites
Place sheet pan in the fridge or freezer for the chocolate to set
Store bites in an airtight container in the fridge for up to a week
